This recipe for Spinach Gomaae is really simple and super healthy. You’ll get the best results if you grind your own fresh sesame seeds but there are also tubes of ground sesame paste available at most Asian grocery stores or you could use tahini. I also recommend eating this dish chilled vs. warm but it is really delicious either way!

Ingredients:
1 lb spinach, cleaned and trimmed
2 tbsp of roasted white sesame seeds
1 tsp of sugar
1 tbsp of shoyu (soy sauce)
3 tbsp of sesame oil for cooking
Directions:
Grind toasted sesame seeds with a mortar and pestle until they form a powder. Alternatively, you can use a clean coffee bean grinder to grind the sesame seeds in small batches.
Combine sesame seeds, sugar and shoyu in a bowl. Should be like a thick paste. Set aside.
Heat a medium saucepan to medium-high.
Add 1 tbsp sesame oil and add immediately add a medium sized bunch of spinach - about ⅓
Stir and cook until just wilted, remove and set aside in a medium sized bowl.
Cook in three batches until done.
When cool, squeeze all liquid out of the spinach and add to the sauce.
Combine spinach with sauce.
Chill until ready to serve.
Sprinkle with roasted sesame seeds for garnish.
